RVA Cafe/Two Twelve Team ABC

This September, Owner and Chef of RVA Cafe in Henrico, Chef Daquan led Two Twelve: Team ABC in the preparation of dinner for the families at RMHC Richmond. The meal featured several fall favorites including chorizo meatballs, herbed mashed potatoes, roasted butternut squash and brussel sprouts.

RMHC Richmond meal volunteers prepare home-cooked dinner for families, so parents can focus on their child’s health. Chef Daquan uses his cooking to spread joy and believes that “Food is art and the aroma is the expression.”

For dinner, all volunteers purchase food and prepare it in our kitchen. Meals are typically provided for 15 people. All food must be prepared at the Ronald McDonald House, a commercial kitchen, or purchased at a store. In order to have dinner ready by 6pm, volunteers arrive to prepare between 4 and 5pm.

The recipe for Chorizo Meatballs: 2 lbs of ground beef, 1 lb of chorizo sausage, 8 oz onions, 8 oz bell peppers, 4 garlic cloves, 1/3 cup parsley, 1/3 cup cilantro, 1/3 cup fresh thyme, 16 oz sweet & spicy bbq sauce, Salt & pepper to taste

The recipe for Herbed Mashed Potatoes: 5 lbs red skin potatoes, 1/2 quart heavy cream, 8 oz butter, 2 red onions, 3 cloves of garlic, 1/3 cup of cilantro, 1/3 cup of parsley, 1/4 cup of fresh thyme, salt & pepper to taste

The recipe for Roasted Butternut Squash and Brussel Sprouts: 2 lbs of butternut squash, 1 lb of brussel sprouts, 8 oz of dried cranberries, 4 oz of honey, salt & pepper to taste
